Where the dish comes from

Khao soi is closely associated with northern Thailand. Recipes differ between shops, communities and households; this guide focuses on choosing and ordering a bowl rather than asserting a single origin story.

What to look for in a bowl

The broth should be the colour of rust, with a film of red oil on top, and taste of dried chilli, turmeric and ginger before the coconut milk softens it. The noodles are flat, yellow and made with egg. The chicken is traditionally a whole drumstick, cooked until it falls apart.

The side plate is part of the dish. Pickled mustard greens add sourness, raw shallots add bite and a squeeze of lime lifts the whole bowl. A spoonful of chilli fried in oil is offered for those who want more heat.

What else to order in the north

If khao soi wins you over, try the rest of the northern table. Kaeng hang le is a mild, slightly sweet pork curry with ginger and tamarind that shows Burmese influence. Nam prik ong is a dip of minced pork and tomato, served with raw vegetables. Sticky rice, eaten with the fingers, comes with everything.

Order around your needs

Ask which proteins are available and whether a meat-free option uses animal stock or other animal ingredients. For an allergy or dietary requirement, discuss the specific ingredients and preparation with the restaurant; a dish name alone cannot establish suitability.
